A still mind

I'd like to say I have been taking time to stop and smell the roses.... or perhaps on vacation, but truth be told I have been trudging thru the waters of life trying my best to keep my head above water.  The radio silence on my blog is deafening to me at times and I hate it. I wish I could pour it all out, and someone out there in Internet land can fix all that is wrong in my world.... but If wishes came true I could fix it myself... right? 

Thank you for still being here.  I promise I will be back to regularly posting next week!  I have some colorful outfits to share.  So, again I am back with a post and a bright moment in the week.  It's Thursday and my friend is coming back to work today after a 3 month maternity leave.  We have missed her dearly and cannot wait to share with her all the funnies she missed, catch her up on the inside jokes, like the day Jen walked in and declared she was going vegan,  and hear all her sweet baby stories.  But at the same time my heart aches for her leaving her bundle of joy for the first time and venturing back to work.  It's difficult to transition the first few weeks and I know her mind will wonder.  I remember when my little guys were babies... then toddlers.  Next thing you know they are graduating preschool and off to kindergarten!  You blink and they are a freshman... then BAM its graduation day.  Welcome to the real world son! I don't know if I would want to go back, but I do wish I could give them shields to protect them from the world!  And maybe a cape! Ha!

I have been busy and still all at the same time. The guest bath is currently being redecorated.  It wasn't a plan... rather a small leak undetected for gosh knows how long, then a plumber to fix said leak... then curling floor... hence we then ripped up and the wallpaper stripped from the walls as well.  Might as well re do it all right?  Not what I wanted to be doing right now, but I am at least taking a few pics and will share the new bath when we complete it.  Here is what it looked like this weekend. yuck right?  It was a black rice cloth wallpaper that I have since stripped the remaining off and cut part of the floor up to be replaced.

Peanut Butter Rice Krispie Treats

One of my boys all time favorite snacks are the Peanut Butter Rice Krispie Treats.  I can make a batch and it will be gone in a day they are that good.   Today I want to share this pure goodness with you and hope they become a favorite at your home as well.  Enjoy! 


Rice Krispie treats

What you will need:

  • 1 C light Karo syrup
  • 1 C sugar
  • 1 C peanut butter
  • 6 -8 C rice cereal
  • 4-6 oz semi sweet chocolate chips
  • 4 -6 oz butterscotch chips
  • 9 x 13 pan
  • Butter or margarine (to grease pan only)
Grease your pan with butter or margarine and set aside until needed.  Do not use pam as it will not release as well.

Place sugar and syrup in a pan large enough to hold the rice cereal when it's time.  




Stir constantly until is reaches a rolling edge boil.  Do not over boil or the sugar will harden once the treats are made and you will never… ever… get your teeth thru them.  Yes I did it, but it only took once to learn that lesson.  You just want it to start a consistent boil around the edges of the pan. 




Remove from heat and add the peanut butter.  Stir it in well.




 
Add the rice cereal and stir to coat all the cereal evenly.  Now I have modified the recipe here a bit.  My mom uses 6 cups of cereal and I think the original recipe calls for that amount as well.  I think they are a bit too gooey so I increased my cereal.   Just note that you can experiment with the cereal  amount between 6-8 cups. 


 
Once you have the peanut butter and the cereal mixed well pour it into the greased pan and press it into the pan.  I have found the back of a greased spoon works well or a square of wax paper as the mixture is still very warm to use your clean hands.  




 
Now, melt the chocolate chips and butter scotch chips together in a double boiler.  If you prefer a thicker layer of chocolate increase the quantities to 6 oz each. (Again, I have done both and this is purely a preference)   If you don't have a double boiler you may melt them in the microwave taken careful measures not to burn it.  You will need to microwave for about 25 seconds and stir, then repeat that process until melted smooth. 

Pour the chocolate mixture over the top of the pressed PB treats and spread to cover them.  


Now with melted chocolate or baking chips they do not set up at room temperature.  I place my dish in the freezer for a flash freeze of the chocolate taking careful notice of the time in the freezer.  NO MORE THAN 10 MINUTES!!!  You may also place the pan in the fridge if you prefer and leave them longer until the chocolate sets. 



Cute them with a large sharp knife into squares and enjoy!

Oh Hello Wednesday… so happy to see you!  It's hump day peeps, lets get excited!  Today's favorites are what I like about June.  A great bag to carry to the pool is always fun and the brighter the better.  It has to be colorful and deep enough to hold plenty of water, towels and lotion!  This one is perfect, and the great thing is it can also be a great running errands bag!   And speaking of running errands I love to throw on a maxi and go.  It is effortless and makes you look polished even if you did forget makeup!!!  

I recently purchased a pair of cutoff jean shorts. I love how versatile they can look depending on what you pair them with.  Throw them on over you swim suit… put on a pair of wedges and a tank with a few long layering necklaces, or a tee and flip flops… however you style them they always work!  You need to add a pair to your summer line up for sure.  And don't go too tattered and torn with them, I know that's the style for some ages, but too much distress and they are difficult to dress up!  I have posted about espadrilles a few times and how I love them.  These beauties are lace espadrilles so that makes them a double score for the win!  So feminine and pretty in the white.  Don't you love them?

Corporate Blue

Hi it's me… remember me?  Yeah I sorta haven't blog in the past few days.  I have been deep in my thoughts and in my own head a little too much to even be on social media or even read my favorite blogs. A few instagrams here and there, but that's about it. Nothing I can't handle, or even haven't started working thru, just personal life stuff and it was a well deserved break.  I felt super guilty and hated it every single morning when I woke up and knew I didn't have a post ready to go. I love my little blog and love all of you.  Thanks for sticking with me!  I don't share too much personal here and really don't plan on it. Life isn't perfect, I'm not perfect, and I sure don't want to ever represent a false sense of reality with my life.  Life happens and we grow from the experiences!  I may decide to write a little about in in the future, but for now just know sometime god places people in your life for a reason, and sometime that reason isn't even about you rather it's for their benefit!  

  I want to go into the week with this business casual outfit from last week I wore to the office.  I had a few meetings out of the office and this little number just felt good!  I love the crisp feel of a button down.  Although this is not a true button down rather an oxford I love it all the same.  The contrast color and cuffs adds such a dressy feel to it don't you think?
